Ingredients

Squid - baby ones are good

Method

Preheat the water bath to 59°C
Clean the squid and scrape away the fine membrane on the inside and outside of the body
Wash and dry thoroughly with a kitchen towel
Season the squid with salt and place flat into a vacuum bag and cook for 1 ½ hours (You can put up to 3 squid on top of each other)
Wash and dry thoroughly with a kitchen towel
Slice into desired size and shape and serve - or sear quickly in a very hot pan and serve with garlic delicately fried in olive oil.
The addition of chillies and herbs works well.
